Top chef offers healthy snacks

VALE of Glamorgan businessman and former Welsh Masterchef David Courtney-Jones has come up with a unique way of offering peckish Barry shoppers a quick, nutritious bite on the move.

David owns Marina's Kitchen - a mobile cafe bar that sets up and shuts down in 15 minutes.

And he wants to bring it to the newly refurbished King Square.

The 44-year-old said: "I think my unit, with its canopies, tables and chairs, decorative 'in season' plants and trees - which are all mobile - will benefit the town.

"There are a lot of people in Barry who, I'm sure, would like to have somewhere to sit and have something to eat. This would be the perfect setting in the summer."

With obesity a hot topic in news headlines, David is also convinced that he has the answer. He added: "We have so many authorities saying we should eat better.

"We'll offer freshly baked baguettes and potatoes, both with low fat fillings, special fresh pastas - all low fat and nutritious.

"I am a chef and a baker and I make my own produce. So I can take out the unhealthy ingredients and replace them with alternatives.

"I have daily demonstrations, where I cook the food in front of the public. With us here, shoppers will be inclined to linger longer and spend more. "

David is so convinced Marina's Kitchen is destined for King Square, he has applied to the Vale of Glamorgan Council for permission.

A spokesman for the local authority said: "Any application of this nature would need street trading consent from the council and would be subject to consultation with various departments and outside agencies, and possibly, before a decision is made, consideration by the licensing committee."
